
Salted Caramel Pancakes
Pancake day is always popular in our house and has been ever since our boys were young. Over the years I’ve made all kinds of pancakes and played around with various recipes but I feel this Salted Caramel recipe is one of the best.
As with many recipes, this came from not having all the usual ingredients to hand so after having a long think I though why not use my well used muffin recipe? Surely it’s the same thing; mixing wet to dry. Maybe with a little more wet so to provide a thinner batter. Well I am pleased to say it worked.
Of course this recipe doesn’t have to be just for Pancake Day you can enjoy them for your weekend breakfast. With the tinniest bit of preparation you can serve these to your loved ones with a cup of coffee and deliciously relax into the weekend.
Salted Caramel Pancakes
250g Plain flour
2 teaspoon baking powder
Pinch of salt
90g vanilla sugar
1 egg
2 tablespoon salted caramel sauce
300ml milk
40ml sunflower oil
Coconut oil
Mix the flour, baking powder, salt and sugar together in a large bowl and set aside while you mix together the wet ingredients.
In another bowl mix the caramel sauce in a splash of the milk and continue to add the milk until well combined. Add the egg and oil and mix until well combined.
In a hot frying pan add one teaspoon of coconut oil and spoon a ladle of the batter into the pan and fry until bubbles start to appear and flip and fry for another minute.

They look delicious Elinor. I have never tried them with salted caramel and I feel I have been missing out. I hope you are well 🙂
