
Chorizo and Hummus Rolls at the Beach Hut
Unexpected sunshine makes everyone happy, even the grumpiest of us. It makes us feel positive and ready to tackle those long put-off tasks like the garden, finishing off the decorating and swapping energy supplier. Ok swapping energy supplier was a total lie but you get my thinking.
We’ve been busy making Summer holiday plans, searching for new places to camp and places to visit in London. Some suggestions might happen and a lot might not but it’s the promise it might that excites and pleases me. And with my people that makes it even more wonderful.

Chorizo and Hummus Rolls (makes 6)
Chorizo sausages, each halved (not the dried type)
1 x jar roasted peppers, sliced if too large
ready-made hummus
rocket leaves
Chilli jelly
6 brioche bread rolls, lightly toasted
In a frying pan, lightly fry the chorizo and place the roasted pepper in the same pan to warm. Start assembling the rolls by placing a dollop of hummus in each roll, then the rocket, peppers, chorizo slices and finally a good smearing of chilli jelly. Eat immediately and have some paper napkins handy as it gets messy.
