
Fireside Supper
Having been brought up to eat dinner at a table, I’m also a stickler for eating all together at a table but sometimes when the fire is lit and something good is on the TV it’s a great treat in our house to eat off our laps. This recipe is a great TV dinner. Yeah, yeah I know what you’re thinking slippery slope and all that but no chance; eating all together round a table is one of the few ways that a parent can talk to their teenagers and they happily talk back: in sentences.
Roasted Sausage and Butternut Squash
(serves 4)
1 small butternut squash, cut into small chunks
2 red onions, peeled and quartered
2 red peppers, cut into chunks but not as small as the butternut squash
8 good quality sausages
2 tablespoons olive oil
1 tablespoon wholegrain mustard
sprigs of fresh rosemary
salt and pepper
Heat the oven to 200 degrees or gas mark 6.
Put the vegetables and sausages in a roasting tin. Add the olive oil and mustard together in a mug and then pour over the veg and sausages. Sprinkle over the fresh rosemary leaves and salt and pepper and give everything a good mix.
Place in oven for 35-40 minutes. You can take out the sausages a little before if you think they are cooking too quickly.
I often make double the amount of veg to have another day with chicken but it’s also lovely warmed and served in a crusty bread roll with cheddar cheese.
