
Marinated Olives
When you go to a restaurant and they ask you if you want olives etc while you order your food and you say, yeah sure and wolf the tiny plate down without even noticing but when the bill comes you go Wow, how much? Yep, I’m with you on this.
So let me show you how to make even the cheapest of olives taste good. Perfect with drinks, perfect anytime.
And don’t throw away the marinade oil as this is delicious mixed with balsamic vinegar to have with bread either at the same time as the olives or to have in your arsenal for another time.
Marinated Olives (1 massive jar)
900g jar of green olives, drained
1 small jar of black olives, drained
olive oil
4 garlic cloves
1/2 teaspoon crushed chillies
1/2 fennel seeds
2 sprigs fresh rosemary
1 large peel of lemon peel
Mix together the olives and place back in the jar along with the herbs and spices. Top up with the olive oil and shake around gently to mix. Keep stored in the fridge. Will last a week but they will be gone before then.
I served these with bread and Pimped Up Hummus at the Sisterhood Camp but pirated the oil back to have at home and it’s still good three weeks later.

You’ve just reminded me I have a jar of home brined olives squirrelled away that a friend bought over from Italy. I must get it out! Olives, hummus and good bread is so simple, but so delicious.
