Oreo Ice Cream Sandwich – Happy Days

We’ve always shared our love of food with our kids and when we recall happy memories with each other of days out and family get togethers they are often sandwiched together with food that we’ve eaten or a recipe that will always evoke that memory.  Sometimes even just the everyday moments have a food attachment in our teens’ memories.

Oreo Ice Cream Sandwich

So when I was given the opportunity to write a recipe for Oreo Biscuits, my boys leapt up and started talking about how they remember trying Oreo biscuits for the first time when they were little.  They remember vividly enjoying them as an after school snack and how they used to split and dunk them in milk.  Now big teens they no longer twist them but the dunking in milk part still remains.

Oreo have brought out new flavours to extend their range and after my boys took great joy in sampling samples sent to me, I decided whatever the recipe had to be, most importantly it should be easy to prepare and something they could make themselves; simply and effectively.

The result: a layer of ice creams and crushed biscuits.

Conclusion:  mid mouthful appraisals and thumbs up.

Oreo Ice Cream Sandwich

1 packet of Peanut Butter Oreo Biscuits

500ml Chocolate ice cream

500ml Vanilla ice cream

Remove the ice creams from the freezer for about an hour before you are ready to assemble the dessert.  Meanwhile, line a 900g/2lb loaf tin with film wrap overlapping to form a good seal.

First, crush the biscuits to a mixture of fine crumb and some larger pieces, set aside.

Once the chocolate ice cream has started to melt, pour the first layer into the lined loaf mould to just under halfway up.

Sprinkle over the crush Oreo biscuits.

Pour over the top the vanilla ice cream over the Oreo biscuits and place immediately into the freezer and freeze for a minimum of 5 hours or overnight.

Remove from the freezer and allow to sit for 10 minutes to soften and turn out and slice.
